The European olive tree Olea Europaea is one of the oldest
cultivated crops. It originated in Iran but soon spread to areas around
the Mediterranean. It was highly valued by the ancient Greeks, for whom it was a
symbol of wealth, abundance, power, fertility and peace. The olive tree, olives
and their oil are mentioned many times in the Bible. This tree is an important
symbol for Christians, Jews and Muslims. It has always been used for cosmetic,
culinary and medicinal purposes.
Olive trees are specific in that they grow very slowly, with the first olives
only after twenty or more years of growth. However, they thrive for an
exceptionally long time, with trees fruiting for 150 years
being no exception. Olive groves thus form a valuable family
heritage that is passed on from generation to generation.
Just as we cannot imagine the arid Mediterranean landscape without the
typical twisted trees with their grey-green leaves, we cannot
imagine the local cuisine without olives and olive
oil.
Extra virgin – best quality and taste
Olive oil is produced by pressing olives. They are divided into several
groups according to the production process. The highest quality is extra
virgin olive oil, from the first cold pressing.
In order to bear this label, the olives must be processed within
24 hours of harvest, exclusively mechanically, under
low pressure and at low temperatures of up to
27 °C. No solvents or other chemicals are used during the pressing of this
quality olive oil. Then the oil is only filtered to get rid of the olive
residue.
The acidity value of the olive oil is 0.58%, which indicates its high
quality.
