Prepare the sourdough starter. Pour the dry yeast into the lukewarm coconut milk, add a spoonful of sugar and a little plain flour. Mix with a whisk. Let the dough sit for about 15 minutes. Put the flour in a bowl, add the dried cane juice, lemon zest, melted butter, a pinch of salt and the sourdough starter. Make a smooth, non-sticky dough. Carefully work the chopped almonds and raisins into the dough. Dust the dough with flour, cover it with a cloth and let it rise in a warm place for at least an hour. The longer the better. After rising, process the dough using your hands. Roll out the dough into a buttered and floured loaf tin. Alternatively, you can plait your Christmas bread. Let the Christmas cake rise on the baking sheet. Then brush with water, sprinkle with almonds and bake in a preheated oven at 180 degrees for 40 minutes. Remove the Christmas bread from the oven and brush with the coconut milk and maple syrup mixture. It will shine beautifully.
